How to roast - and not screw it up - beef style
Roast beef with onion jué + roast potatoes - This is the recipe that you make for Sunday dinner... When you've spent the whole day cleaning your apartment just because your mother is coming over and you are going to impress her with your cooking skills, just so that she wont question you on how your life is a mess, or harass you as to why your ass is still single.
YOU'LL NEED:
For the BEEF...
1.5 kg quality topside of beef
2 medium onions
1 bulb garlic
1 cup red wine for you & 1 cup for the recipe
1/2 cup balsamic vinger
1 tble spoon honey
1 lemon or orange
1 small bunch fresh thyme, rosemary, bay or sage,
olive oil
black pepper
salt
For the POTATOES...
6-8 medium size potatoes
1 tble spoon turmeric
1 tble spoon paprika
olive oil
salt
pepper
🔪 PREP TIME...
Take your beef out of the fridge 30 minutes before it goes into the oven.
Peel and chop your onions and garlic and set aside.
Get a roasting pan and grease it with oil. Set out your rosemary, making a bed for your meat.
Chop all your potatoes into similar size pieces (so in half or in quarters)
Pop them in a mixing bowl and cover with flour, turmeric and paprika and give them a toss.
Lightly cover a baking dish in olive oil and put your potatoes in there. Make sure there's plenty of room and they're not stacked up on top of each other. Set aside for now.
Preheat your oven to 200°C/400°F
Get your beef and pat it down with a paper towel.
Then salt and pepper every side.
🔥 COOKING TIME...
Heat up a table spoon of oil in a saucepan, once it is hot, throw in the onions and garlic...
Once they've been in there for a hot minute, push them to the outside of the pan and pop your beef in the middle...
Sear it for only 2-3 minutes on all sides... Then, leaving the onions and garlic there, turn the heat off and take the meat out and lie it on its rosemary bed you prepared earlier...
Place the beef it in the oven for 1 hour and 10 minutes (set a timer) depending on how you like it cooked... Just in case you have less or more meat or want it super rare/well done... heres a calculator
After that's been cooking for 15 minutes, pop your potatoes in the oven as well...
Now, back to your onions... turn the heat back on and once they start to sizzle add 1 cup of wine.
Once this is starting to bubble, add your balsamic and the juice of either your lemon or orange...
When that starts to reduce, add your honey... once it has melted, remove from the heat....
Before you sit down with that second glass of wine, turn your meat and potatoes over in their pans...
You can either use this time now to cook any extra veggie's or accompaniments - or you can sit down and drink that wine (like I'm going to do) and try not freak out about your mum's arrival. Whatever.
Once the timer goes off, take your meat out of the oven and out of its pan and place on a chopping board.... don't poke it... let it sit there for 15 minutes, just chillin'.
Now check your potatoes buy sticking a knife through them... if you meet any resistance keep the oven on for another 15 minutes if you don't and they seem crunchy on the outside squishy on the inside... turn your oven off.... you can leave them in there if you like...
After the beef has taken its 15 minute break, place it in your saucepan with the onion sauce... roll it around and coat all its juicy sides...
SERVING TIME...
Take your potatoes out of the oven... pop them in the serving bowl that best says - I've got my life together...
Slice up your meat and cover it with the onion sauce...
And Viola!... Juicy juicy rump.
