Blackout Cake - The Devils Food
The chocolate cake to end all chocolate cakes, the one that will solve all your problems... and then probably become one...
This devils food cake is amazing! and very hard to screw up (for all you non-bakers out there), it does however make a rather large cake so if you intend on eating the whole thing yourself maybe cut the recipe in half.
GET YOUR SHIT TOGETHER:
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
3⁄4 cup unsweetened cocoa powder
1 1/2 cups sugar
1 cup vegetable oil
1 cup hot coffee
1 cup milk
2 large eggs
1 teaspoon vanilla essence
You also need... an egg beater (preferably electric), a mixing bowl, a cake tin and a spatula unless you intend to lick the bowl. You know what forget the spatula.
HOW TO:
Preheat your oven to 160°C / 325°F
In a large mixing bowl (the biggest one you got) sift together all the dry ingredients (flour, salt, baking powder, baking soda, cocoa, sugar)
Add oil, coffee and milk and beat for 2 minutes. Make sure its not lumpy.
Then add both eggs and vanilla and beat again.
Grease your cake tin (or line it with baking paper if you are that way inclined) and pour the mixture in. A 9" x 13" or two 9" round pans should work.
Bake 9 x 13 pan for about 45 minutes or the two 9" pans for about 30 minutes.
Once the time is up, stick a skewer in and if it comes out relatively clean you're done! I know its hard but let it cool just a little in the pan, then pop it out and cool it on a cake rack, or in your mouth. Whatever. No judgement.
